Some of the highlights are that Japan will get a Japanese Siri, face detection on the camera now shows all faces detected, addresses bugs affecting battery life, fixes the issue of audio call drops for outgoing calls.
How to update your device to iOS 5.1
1. Ensure you're using the latest version of iTunes.
2. Using your USB cable connect your device to your computer
3. After iTunes opens, select your device from under devices
4. Click 'check for update' in the summary pane and this will check for all available updates
